Instructions
In a large skillet over medium heat, pour in the olive oil. Once heated, add the diced onions and sauté for about 5 minutes, or until they turn translucent and slightly golden.
Add the minced garlic to the skillet and sauté for an additional minute, stirring constantly until fragrant but not browned.
Transfer the sautéed onion and garlic mixture to a crockpot. Then, add the sliced kielbasa, chopped green beans, diced tomatoes, and vegetable broth to the pot.
Season the mixture with smoked paprika, dried thyme, freshly ground black pepper, and sea salt. Stir everything gently until all ingredients are well combined.
Cover the crockpot with its lid and set it to cook on low for 6-8 hours or on high for 3-4 hours, until the green beans are tender and the flavors have melded beautifully.
If you enjoy a little heat, sprinkle red pepper flakes into the dish during the last 30 minutes of cooking for that extra kick.
Before serving, taste the dish and adjust the seasoning with more salt or pepper if needed.
