Instructions
In a large mixing bowl, combine the rolled oats and smooth peanut butter. Add in the honey (or maple syrup), vanilla protein powder (if using), ground cinnamon, and a pinch of sea salt. Mix thoroughly until all ingredients are well incorporated and you have a thick, cohesive batter.
Gently fold in the dark chocolate chips and your choice of chopped nuts, making sure they are evenly distributed throughout the mixture to enhance flavor in every bite.
Prepare an 8x8 inch baking dish by lining it with parchment paper, allowing the edges to overhang for easy lifting once the bars are set.
Carefully spread the oat and peanut butter mixture into the lined baking dish. Use a spatula to firmly press the mixture down, ensuring it forms an even layer in the dish with no gaps.
Place the baking dish in the refrigerator and allow it to chill for at least 1-2 hours, or until the bars are solid and firm to the touch.
After the mixture has set, lift the entire slab out of the dish using the parchment paper. Cut into squares or rectangles depending on your desired size.
To store, keep the bars in an airtight container in the refrigerator where they will stay fresh for up to one week, or freeze for longer enjoyment.
