In a medium mixing bowl, add the creamy peanut butter and honey (or maple syrup). Using a spatula or spoon, mix these ingredients thoroughly until the mixture is smooth and creamy without any lumps.
To the peanut butter mixture, add the rolled oats, chocolate chips, unsweetened cocoa powder, salt, and vanilla extract. Carefully stir all the ingredients together until everything is well incorporated, ensuring there are no dry bits left uncombined.
Prepare an 8x8 inch baking pan by lining it with parchment paper, allowing some of the paper to hang over the sides for easier removal later.
Spoon the peanut butter mixture into the lined pan. Use a spatula or your hands to evenly spread and press down the mixture until it forms a smooth, compact layer. Make sure to press firmly to ensure the bars hold together well.
(Optional) For a decorative touch, melt a few extra chocolate chips in the microwave in 15-second increments until smooth. Drizzle the melted chocolate over the top of the prepared bars to enhance both flavor and appearance. Allow the chocolate to cool slightly before proceeding.
Place the pan in the refrigerator and let the bars chill for at least 1 hour. This will allow the mixture to firm up nicely. Once set, use the overhanging parchment paper to lift the bars out of the pan.
Cut the chilled mixture into squares or rectangles to serve. Store any remaining bars in an airtight container in the refrigerator for up to a week for optimal freshness.
Notes
Serve the bars on a decorative platter and sprinkle a few extra chocolate chips on top for a delightful finishing touch.
