Instructions
Begin by preheating your oven to 350°F (175°C) to prepare for baking.
Heat the olive oil in a large skillet over medium heat. Once hot, add the chopped onion and sauté until it becomes translucent, approximately 5 minutes.
Introduce the minced garlic to the skillet and continue sautéing for another 1-2 minutes, being careful not to burn the garlic, until it releases its fragrance.
In a sizable mixing bowl, combine the creamy cream of mushroom soup, rich cream of chicken soup, tart sour cream, and undrained diced tomatoes with green chilies. Add the ground cumin, chili powder, salt, and pepper. Whisk these ingredients together until the mixture is smooth and well blended.
Fold in the shredded chicken along with the sautéed onion and garlic until all components are thoroughly mixed.
Take a greased 9x13 inch baking dish and layer half of the corn tortilla strips evenly across the bottom.
Spoon half of the chicken mixture over the tortilla layer, ensuring it spreads uniformly. Top this layer with half of the shredded sharp cheddar cheese.
Repeat the layering process by adding the remaining tortilla strips, pouring over the remaining chicken mixture, and finishing with the last of the cheddar cheese.
Cover the baking dish tightly with aluminum foil to retain moisture and bake in the preheated oven for 30 minutes.
Carefully remove the foil and continue baking for an additional 15-20 minutes, or until the cheese is beautifully bubbly and golden brown on top.
After baking, allow the casserole to cool for about 5 minutes before serving. This will help the layers hold together when serving.
