Instructions
Preheat the oven: Set your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper to prevent sticking.
Mix dry ingredients: In a medium-sized mixing bowl, whisk together the all-purpose flour, baking soda, ground ginger, ground cinnamon, ground cloves, and salt. Once well combined, set this mixture aside.
Cream the sugars and butter: In a large mixing bowl, use an electric mixer to cream the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy—this will take about 3-5 minutes.
Incorporate wet ingredients: Add the egg, molasses, and vanilla extract to the creamed mixture. Beat until all ingredients are smoothly combined.
Combine wet and dry mixtures: Gradually add the reserved dry ingredient mixture to the wet ingredients. Stir until just combined; be careful not to overmix to keep the cookies tender.
Shape the cookies: Roll the dough into 1-inch balls. Then, roll each ball in granulated sugar until coated and place them on the prepared baking sheet, spacing them about 2 inches apart to allow for spreading.
Bake the cookies: Place the baking sheet in the preheated oven and bake for about 8-10 minutes, or until the edges are firm and the centers remain slightly soft.
Add the chocolate kisses: Remove the baking sheet from the oven. While the cookies are still hot, gently press a chocolate kiss into the center of each cookie.
Final baking: Return the cookies to the oven for another 1-2 minutes to let the chocolate kisses soften without melting into a puddle.
Cool and serve: Take the baking sheet out of the oven and allow the cookies to cool on the sheet for a few minutes. Then, carefully transfer them to a wire rack to cool completely.
