Instructions
In a large skillet, heat the olive oil over medium heat. Once hot, add the finely diced onion and sauté for approximately 4-5 minutes, or until it becomes translucent and soft.
Stir in the minced garlic and continue cooking for an additional 1-2 minutes, until the garlic is fragrant and lightly golden.
Carefully add the chopped spinach to the skillet, stirring well. Sauté for about 4-6 minutes, or until the spinach is wilted and its moisture has mostly evaporated.
Reduce the heat to low and incorporate the heavy cream and softened cream cheese into the skillet, stirring continuously until both are fully blended and the mixture is creamy and smooth.
Sprinkle in the grated Parmesan cheese, nutmeg, and a generous pinch of salt and pepper. Stir until everything is well combined and heated through, about 3 minutes.
Taste the creamed spinach and adjust the seasonings if needed, adding more salt, pepper, or nutmeg as desired.
Once the dish is finished cooking, remove from heat and let it rest for a minute to allow the flavors to settle before serving.
Notes
For an appealing presentation, spoon the creamed spinach into a warmed serving bowl. Top with toasted pine nuts and lemon zest.
