Begin by preheating your oven to 200°F (93°C). While the oven heats up, prepare your baking sheet by lining it with parchment paper. For precision, you may want to draw circles measuring about 1 inch in diameter with a pencil underneath the parchment to guide the size of your meringue kisses.
In a clean, dry mixing bowl, use an electric mixer to whip the egg whites on medium speed. Continue whisking until the mixture becomes foamy. Add the cream of tartar at this point, and increase the speed to high, whipping until soft peaks form (the peaks should gently bend over).
Once soft peaks are achieved, gradually introduce the granulated sugar, adding one tablespoon at a time. Keep whisking on high speed until the mixture becomes glossy and stiff peaks form. This process typically takes about 5 to 7 minutes.
When the meringue is ready, gently fold in the vanilla and peppermint extracts using a rubber spatula. Take care to immerse the flavors without deflating the precious air you’ve whipped in.
If adding color is desired, divide the meringue mixture evenly between two bowls. Add a few drops of red food coloring to one bowl and green to the other, mixing carefully. You can also choose to leave one bowl uncolored for a marbled effect.
