In a mixing bowl, combine the Greek yogurt with honey and vanilla extract. Stir the mixture vigorously until all the ingredients are thoroughly blended and smooth.
Using a fork or toothpick, take each strawberry half and dip it into the yogurt mixture, ensuring it is thoroughly coated. Let any excess yogurt drip off before placement.
Line a baking sheet with sheets of parchment paper. Carefully place the yogurt-covered strawberries on the tray, ensuring there is space between each piece to prevent them from sticking together.
Take a microwave-safe bowl and add the dark chocolate chips along with the coconut oil. Microwave the mixture in 30-second increments, stirring each time, until the chocolate is completely melted and silky smooth.
Once melted, use a spoon or a piping bag to elegantly drizzle the rich chocolate over the yogurt-coated strawberries.
