In a large mixing bowl, combine the shredded mozzarella cheese, pepperoni slices (or chopped veggies), pizza sauce, and Italian seasoning. Stir gently until all ingredients are evenly mixed and coated with sauce.
Take an egg roll wrapper and lay it flat on a clean surface, with one corner pointing directly towards you. Spoon approximately 2 tablespoons of the prepared cheese and pepperoni mixture into the center of the wrapper.
Carefully fold the bottom corner of the wrapper up over the filling. Next, fold in the sides and roll the wrapper tightly away from you to create a sealed roll. Make sure to press down the edges to ensure a tight seal. Repeat this process with the remaining wrappers and filling until all are prepared.
Preheat your air fryer to 375°F (190°C) for about 5 minutes to ensure even cooking.
Lightly brush or spray the exterior of each pizza roll with olive oil. This step is key for achieving that desired golden brown and crispy texture while cooking.
Place the pizza rolls in the air fryer basket in a single layer, making sure they are not overcrowded. If necessary, cook in batches to allow proper air circulation.
Air fry the rolls for 8-10 minutes, flipping them halfway through the cooking time. They should be golden brown and crispy once finished.
Allow the pizza rolls to cool for about a minute after cooking, ensuring they’re safe to handle. Serve them hot with additional pizza sauce on the side for dipping.
For an extra touch, garnish with torn fresh basil leaves before serving.
Notes
For a vegetarian option, substitute pepperoni with chopped veggies.
